Welcome to Single-Serve Sweets! I'm Lisa, a wife and working mom of one with an insatiable sweet tooth. Unfortunately, I'm one of those people who'll eat a batch of sweets until they're gone. Cookies, cupcakes, cheesecakes, scones, fudge--if it's baked or mixed and it has sugar in it, it just doesn't stand a chance around me. Poor, poor sugary treats. Poor, poor waistline. 

I made a tray of blondies about a week before I came up with this idea. My husband came into the kitchen, asked what I was making, I told him, and his shoulders sagged as he said, "Ugh, really?" Not because he didn't like them, but because he didn't want to be tempted to eat them. After the pang of guilt shot through me, I realized that I had to stop doing that to him. It was one thing if I wanted to indulge myself, but a completely other thing if I was making it more difficult for him to stay on the straight and narrow.

That's when the wheels started turning and when I started thinking that there had to be another way for me to "scratch that sugar itch" without taking my husband, my daughter, or my coworkers (who often get my leftover baked goods) down with me. That's when this idea started brewing, and a blog was born shortly thereafter.

These recipes are designed for situations when you really only need or want one. The possibilities are endless! You're eating healthy, but it's your little one's birthday and you want to make them a cupcake celebrate. You want a single cookie, but know if you make a batch of two dozen, you'll devour them all in just a few days. You've got a craving for a square of fudge, but that's all you want. You have two children--one wants a chocolate cupcake; the other wants a yellow one.
